Sardine snack with Multi Grain Rye Bread Crackers

Sardines are a great source of nutrients, especially omega-3. Always buy sardines packed in olive oil and eat no more than half a can for a snack (the rest can be put into a mason jar and eaten the next day).Eat with whole grain crackers

Prep time: 10 minutes


Ingredients

120gram tin of sardines packed in olive oil

½  tomato, diced

¼ teaspoon Maldon salt

Pinch of black pepper

Juice of 1⁄2 lemon


Method

Drain some of the oil from the sardines. In a small bowl, mix the sardines with the tomato, salt, pepper, and lemon juice. Serve in a piece of romaine lettuce, letting the leaf act as an edible serving cup.
